Beef & Potato Stew
In a large pot, heat oil. Add onion and cook until tender, about 4 minutes.
Add beef, garlic, cumin, coriander, and chile. Stir and cook over high heat for 3 minutes.
Add stock, potatoes, carrots, and bell pepper. Bring to a boil. Reduce heat to low, cover, and simmer gently until beef is tender, 30 to 40 minutes. If needed, add a small amount of water to keep stew moist.
Season with salt and pepper. Sprinkle with cilantro just before serving.
