Chinese Long Bean & Tofu Salad

 1 tbsp Vegetable oil
 1 package firm tofu drained and chopped
 ½ lb Chinese long beans (or fresh green beans)
 3 tbsp roasted peanuts crushed
 1 tbsp EACH peanut oil or reduced sodium soy sauce AND lime juice
 1 tsp Sugar

Pan fry tofu in oil; set aside.

Blanch long beans in boiling water 5 minutes until slightly tender; place in water to stop cooking.

Mix dressing by combining peanuts, peanut oil, soy sauce, sugar and lime juice.

Chill tofu and long beans; toss with dressing and serve warm or chilled.
