Sausage & Greens Stew

1 lb Dried beans
½ lb sausage sliced lengthwise and chopped
2 Small onions chopped
4 Stalks celery chopped
2 tsp teaspoon Dried thyme
8 cups Water or Low-sodium chicken broth
2 bunch kale or Collard greens leaves cut into bite-sized pieces
3 tsp Apple cider or Red wine vinegar
Salt and black pepper to taste

Combine the beans, sausage, onion, celery, and thyme in a slow cooker.

Add the broth and stir to combine.

Cover and cook on low for 7–8 hours or on high for 4–5 hours.

30 minutes before serving, add the greens. Cover and cook on high until the greens are tender.

Add the vinegar and salt and pepper to taste.
