White Chili
½ Onion chopped
2 Cloves garlic minced
1 large carrot chopped in small pieces
1 lb pound bag of frozen white corn
2 (14-ounce) Cans low-sodium great northern white beans drained and rinsed
2 fresh green chiles minced
1 cup water or low-sodium broth
3 tbsp Lemon juice
1 ½ tsp Cumin
2 tsp dried oregano or Italian seasoning
salt and black pepper to taste
plain yogurt, sour cream, or shredded cheese optional

Cook onion in a little oil over medium heat.

Add garlic and cook for 2 minutes.
